Bourbon Bacon Sweet Potatoes
BOURBON BACON WHIPPED SWEET POTATOES WITH BROWN BUTTER
INGREDIENTS:
4-6 Large Sweet Potatoes, peeled and chopped
1⁄2 a pound of bacon
1⁄2 cup of brown butter (slowly
cook in a pan until fragrant
and golden brown.)
1/3 cup of Milk or half and
half
2 tablespoons of bourbon
Salt and pepper to taste
Peel and chop the sweet potatoes into chunks and add to a pot of boiling water. Bring to a boil and cook until tender (roughly 20 minutes).
2. While the Potatoes are boiling, add your bacon to a pan and cook until crispy. Set aside.
3. Drain the potatoes and add them to a bowl. Mash them up until they are fluffy. Add the milk, brown butter and bourbon. Whip until everything is nice and fluffy.
4. Add bacon right before you serve to make sure it is nice and crunchy.
5. Add salt and pepper to taste and serve!
*NOTES:
** To add a little more sweetness, add dark brown sugar or maple syrup to this dish!
You can add some of the bacon fat to this dish, but I find that there is enough of the fat on the bacon.
