Maple Butternut Squash
This is one of my favorite side dishes in the fall! Your family and friends will love the presentation and the taste!
MAPLE HASSELBACK BUTTERNUT SQUASH

The perfect Thanksgiving or fall dish!
Ingredients
What you will need:
- 1 Butternut squash
- 1⁄4 cup of olive oil
- 1⁄4 cup of maple syrup
- 2 tablespoons of butter
- 4 sprigs of thyme
- Salt and pepper
Instructions
- Preheat the oven to 425 degrees.
- Using a vegetable peel, remove the outer shell of the butternut squash. Cut in half long ways and de-seed.
- Brush with olive oil, add salt and pepper and bake for 20 minutes.
- Remove and let cool. Use two wooden spoons along the squash to keep from cutting through. Using a sharp knife, make 1/4th inch cuts along the entire squash.
- While the squash is cooling, add 1⁄4 cup of maple syrup and 2 tablespoons of butter to a saucepan and bring to a simmer.
- Brush the mixture on the butternut squash. Add 1⁄4 cup of water to the baking dish to keep from burning.
- Bake for 15 minutes. Remove and add more of the butter mixture and bake again for 15 minute or until tender.
- Remove and dress with remaining butter/maple mixture add thyme sprigs and serve!
