Crunchy Salmon + Creamy Basil and Spinach Dish
Hands down the most amazing Salmon dinner dish ever!!! 30 minutes, super simple and ONE PAN!!! The key to this crunchy perfect salmon is the skillet! Allow the skillet to get super hot before adding the olive oil. Then add the salmon skin side down and don’t touch it until crunchy!

- In a large skillet, heat 2 tablespoons of olive oil. (The key to crispy salmon is to let the skillet get super hot before adding the olive oil.)
- While the skillet is heating up, dust your dry salmon with salt and pepper.
- Place each piece of salmon into the hot pan skin down first. Let the salmon sear well over medium high heat for 3-5 minutes, depending on the thickness of the fillet. Flip and cook until crispy and golden brown.
- Remove the salmon and set it aside.
- To make the sauce, in the same skillet
- add 2 tablespoons butter to whatever oil remains in the pan from making the salmon. When it is melted, add minced garlic. Cook, stirring frequently, for about 3 minutes or until fragrant.
- Add tomatoes to the pan with the butter, and cook for 1 minute, or until some of the tomatoes are starting to split.
- Pour in 1 cup heavy cream. Add 1 1/2 teaspoon kosher salt, 1 teaspoon dried basil, 1/4 teaspoon cayenne pepper, and black pepper to taste. (for a spicier dish, add more cayenne)
- Let the cream mixture come to a light simmer.
- Add 1/2 cup Parmesan cheese. Add the spinach and allow to wilt into the sauce.
- Continue cooking over medium heat and allow the cream to thicken.
- Add in fresh basil. Return the salmon to the pan.
- You can serve this with rice, pasta, mashed potatoes or a fresh green salad!
