Quick and Delicious Chicken Parm

- Preheat oven to 350 degrees.
- In a bowl add 3 eggs and mix. In another bowl add the breadcrumbs. Dip a piece of chicken in the eggs (coat well) then dip in the bread crumbs (completely coat).
- In a pan, heat up 2-3 tablespoons of olive oil on medium heat. Cook each piece of breaded chicken until golden brown on both sides. Set each piece aside after cooked. Cook through every piece (about 4-5 pieces).
- In a 9 x 13 inch pyrex, add a thin layer of pasta sauce. Sprinkle some mozzarella cheese on top. Then add your chicken in a brick layer to cover the pyrex. Add another layer of pasta sauce to cover the chicken (you might need to add another jar). Cover the entire top of the pyrex with parmesan cheese and left over mozzarella. Before covering with foil, spray the foil with pam to keep from sticking to the melted cheese. (tip: I like to pack down the top of the chicken parm dish create a thick cheesy layer.)
- Cover with foil and bake for 20 minutes OR until the cheese is completely melted.
- Add to a bed of pasta or to a plate, place 2 pieces of fresh mozzarella to the top and garnish with basil, salt and pepper to taste. Enjoy!
