- First, pre-heat the oven to 400 degrees.
- Rub the pork tenderloin with the mixture of the cajun seasoning and and wrap the bacon around it tightly.
- Heat an oven safe skillet over medium heat, add the bacon wrapped pork tenderloin and cook until it is browned on all sides, about 10-15 minutes.
- Transfer the pan to the oven, roast until the pork reaches 140F, about 10-15 minutes.
- While the pork is in the oven, mix the mustard and peach jam in a bowl and set aside.
- Pull the pork out and cover with mustard and jam mixture. Put back in oven and let cook for 2 minutes. Pull out and let it rest before serving.
