Coconut + Lime Creamy Chicken

Indulge in this delicious creamy cilantro, lime + coconut chicken over rice, pasta or on its own.

- Clean chicken breasts and place in a 1 gallon zip lock bag. Using the flat side of a mallet, tenderize the chicken until thin. Place on a plate, season with salt and pepper.
- In a large pan (or dutch oven), add butter and heat to medium/high heat. Add chicken and sear on both sides for about 3 minutes each. Remove chicken and set aside.
- In the same pan, add a little chicken stock, using a whisk, scrap up the cooked on brown bits. Add 1 tablespoon of Olive Oil, green onions and garlic. Cook down for about 1 minute. Stir in the remaining chicken stock, lime juice and honey. Simmer for about 4 minutes as the mixture cooks down and concentrates.
- Stir in coconut milk and cream. Add lime zest and red pepper flakes. Simmer until the sauce is reduced and thickened.
- Return chicken to the pan and coat with sauce. Using a spoon, taste, add salt and pepper to taste.
- Top the chicken with cilantro and parmesan cheese. Serve over a bed of coconut rice, pasta or salad! Enjoy!
