Summer Corn Ravioli
This recipe is super easy and can be all homemade or store bought! I love to enjoy corn all summer long and into fall, and this has been a go to for our family for years! Enjoy!
Summer Corn Ravioli
One of my favorite things to eat during the summer is corn! You can use canned corn or fresh corn, but either way you will love this delicious fresh and summery dish!

- In a pot, boil water and add ravioli, cook until done.
- In a pan, add 2 tablespoons of olive oil on medium heat, cook corn for 5 minutes. Add 4 tablespoons of butter and fresh thyme. Cook down until thyme is fragrant.
- Once cooked down, add sauvignon blanc and lemon to the pan and cook down for 10 minutes, or until the liquid has cooked down.
- Remove corn and set aside, in the same pan add 2 tablespoons of olive oil. Add tomatoes and garlic, cook until fragrant and cooked down. Roughly 5 minutes.
- In a small sauce pan, add 1 stick of butter and simmer on low. Use a whisk to stir the butter, cook until light brown and nutty in flavor.
- To Serve: Add ravioli to a bowl and cover with brown butter. Add corn mixture to the top. Drizzle tomato and garlic on top. Garnish with basil, a pinch of parmesan cheese, salt and pepper to taste! Enjoy!
